4,5 garlic cloves
2 sweet red peppers
3,4 tomatoes, peeled
Salt and pepper to taste.
Start with a little olive oil in pan, or may substitute for coconut oil. Add onions and garlic and sauté for a few minutes. Add red pepper, incorporate and let cook for another 2,3 minutes. Add eggplant and repeat the process, add zucchini and do the same. Incorporating one vegetable at a time. Last thing to add are the tomatoes, peeled and cut. Add Himalayan pink salt and black pepper to taste. Cover and cook for about 10 minutes, stirring every once in a while, or until desired consistency. Add any herbs if desired, such as parsley. Enjoy with pasta, rice, chickpeas, egg, or toast. It’s delicious anyway!! Let me know what you think!! 💚🙏🏼
